Recipe Summary

  • 14 ounces uncooked rotini pasta
  • 2 cucumbers, chopped
  • ½ onion, finely chopped

Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain and cool by running cold water over the pasta in a colander set in the sink.

Combine cooked and cooled pasta with the cucumbers, onion, tomatoes, and olives in a large bowl. Pour the Italian dressing over the salad and stir to combine. Cover and refrigerate for at least two hours before serving.

Hey friends! I am so glad that you are here today! I am sharing one of my most favorite soup recipes! My hearty pasta fagioli recipe. Its been a while since I have made this since I am on a low FODMAP diet which restricts beans, onions and garlic, which are the best parts of this soup! I cant wait until I can cook it up again! Its seriously one of my most favorite. This recipe makes a rather large batch, enough to feed 6-8 maybe even more! I love making extra so that we can have some left over, it is always better the next day.

This recipe was inspired from a similar one I had used for years in a healthy cook book, but I changed it up to reflect what I like. I like a bit more beans and with the carrots, meat and pasta, there are tons of amazing textures that make this soup so fun to eat.

This is a very easy dinner to make. Basically, you chop your onions, celery and carrots and set aside. Brown the meat in a large pot. Add the onions carrots, celery, and minced garlic and let it all sautee on medium low for about 10 minutes or until the carrots begin to soften.

Next you will add the rest of the ingredients including the beans, chicken stock, tomato sauce and crushed tomatoes and all the herbs. Let this all cook for about 30 minutes or until the carrots are soft and tender.

Last you want to add the pasta and the vinegar. I have done the pasta two different ways. You can either cook it separate until they are al dente and then add to the soup, or you can add the dry pasta to the soup and let it cook. It will soak up some of the liquid so make sure to ad a bit more broth if you need to. You can this soup to be stew like in its consistency, but not too thick at the same time.

Before serving, I add the vinegar and cook it for another minute or two. The vinegar is what gives it a bit of zip and you really need it in the soup.

How to Make the Best Pasta Fagioli

1. Add some medium diced up pancetta bacon to a large pot over medium heat in a small amount of olive oil and cook until they are crisp and browned and then set aside.

2. In the same pot over medium heat add in the medium diced onions, carrots and celery and cook until the vegetables are tender.

3. Next, add in the garlic and saute for 2 to 3 minutes or just until cooked.

4. Add in the crushed san Marzano tomatoes, along with the drained beans, chicken stock, and parmesan rinds and cook over low heat for 45 minutes or until the beans are tender. I used whole peeled San Marzano tomatoes that I crushed with my hands and juice but you can just use the tomatoes if you are wanting the pasta Fagioli soup to be more of a broth base and less tomatoey.

5. Add about 2-3 cups of the pasta Fagioli ingredients along with ½ cup of the chicken stock from the soup to a blender and blend, with the center part of the blender top removed so that it does not explode, and puree until smooth.

6. Pour the blended soup back into the soup pot and mix it in to help thicken it up. If you want your pasta Fagioli to be really thick, simply mix in a slurry which is 3 tablespoons of corn starch mixed with 2 tablespoons of water.

7. Finish the pasta Fagioli with fresh chopped parsley, rosemary, salt and pepper, and the crisp-cooked pancetta.

8. Serve the pasta Fagioli with cooked homemade pasta or a boiled classic ditalini pasta with parmesan cheese and herbs. I oftentimes reserve a few of the crisp-cooked pancetta lardons to garnish with as well.


What you’ll need to Make Pasta e Fagioli

Before we get started, a few words about the ingredients. Pancetta is simply Italian bacon. Instead of being smoked like American bacon, it is cured with salt and spices and then dried. You can find it in the deli at most supermarkets or precut and packaged in the refrigerated gourmet foods aisle, which is a great time saver.

For the wine, be sure to use something inexpensive but still good enough to drink (no supermarket cooking wine!). Since the recipe only calls for 1/2 cup, feel free to use one of those mini bottles sold in packs of four — they are great for keeping on hand for cooking.

For the lentils, I prefer French green lentils (or lentilles du Puy) because they hold their shape when cooked (you can always find them at Whole Foods) but if you can’t get them, any brown or green lentils are fine.

Begin by heating the olive oil in a large pot. Add the pancetta and cook until the fat begins to render, about 5 minutes.

Add the onions, carrots and celery and cook until the onions become translucent.

Pour in the white wine and cook until almost evaporated.

Next, add the broth, salt, pepper, beans lentils, tomatoes, bay leaves and rosemary.

Then reduce the heat and simmer until the lentils are tender, 20-30 minutes, depending on the type of lentils you used.

Use a slotted spoon to transfer about one cup of the beans and a little broth to a blender.

Purée until smooth and set aside.

Meanwhile, add the dried pasta to the simmering broth.

Cook until the pasta is tender, then add the reserved bean purée back to the pot. The broth will be slightly thickened from both the pasta starch and the bean purée.

If the soup seems too thick, thin it with a bit of water. Stir in the Parmigiano-Reggiano.

Ladle the pasta e fagioli into bowls. Drizzle with a touch of olive oil and sprinkle with more cheese, if desired. Enjoy!
