Avocado is also called poor butter. For us for a long time it was a luxury, but now it is quite reasonable in price, especially considering the multiple properties. And as avocado has a high protein content it is very suitable now, during fasting. If you are fasting avocado paste, give up yogurt, possibly add 1-2 tablespoons of olive oil.

Method of preparation:

We choose well-baked avocados. Cut the avocado fruit lengthwise until the knife reaches the "nut" in the middle. Peel the first half and then gently insert the knife into the "nut" and remove it.

Peel a squash, grate it and put it in a blender.

Immediately put lemon juice on it so that it does not oxidize and then add the yogurt. Mix the composition. It is recommended to use a vertical blender to obtain a paste as fine as possible. As the vertical one gave way to me, I used the blender of the robot, which was not very efficient.

I've always been an avid pasta fan. They seem so easy to make and the combinations can be as simple as they are tasty. Today I propose a spaghetti recipe with avocado pesto. I confess, it's the first time I do them and I honestly don't regret it at all.

For this recipe we needed the following ingredients (for 2 people):

  • 250 grams of cherry tomatoes
  • 250 grams of durum wheat spaghetti
  • 2 avocado
  • parmesan in abundance
  • garlic
  • a lemon
  • fresh basil 15-20 leaves
  • olive oil
  • salt pepper

Step 1

I put in the blender the cleaned avocado, together with the basil leaves, freshly squeezed lemon, olive oil and 2 cloves of garlic. I left it until the paste was made, but not very fine, so that it would remain textured. To taste, I added salt and pepper.

Step 2

In a large pot I boiled the salt water. When the water started to boil, I put the spaghetti without breaking it, for a few minutes, until they came out al dente.

Meanwhile, in a frying pan I hardened 2 cloves of garlic with a little olive oil over which I immediately put the cherry tomatoes cut in half. I mixed them enough to brown a little and then I added the pasta and a few tablespoons of water from which they boiled.

After mixing the pasta for a minute, I added the avocado pesto over and parmesan in abundance.

  • 300 gr. - pasta (optional)

  • 7-8 basil leaves
  • 20 gr. - Parmesan race
  • 300 gr. - Cherry tomatoes
  • 2 tablespoons olive oil
  • 2 tablespoons & # 8211 lemon juice
  • Salt and black pepper

Method of preparation:

  1. Boil the pasta according to the instructions on the package. Before draining, pour 1/3 cup of the boiled pasta water.
  2. Cut avocado: with a knife, cut it long all around. Insert the blade of the knife into the kernel and gently pull it back to remove it, and with the help of a spoon, remove the core.
  3. Put in a blender: avocado, garlic cloves, basil leaves, lemon juice, grated Parmesan cheese, olive oil, 1/3 cup of water kept from boiling pasta and season with salt and black pepper to taste. Mix everything well until you get a creamy and fine sauce.
