I mixed the sifted flour with salt, sugar and yeast.

I then added eggs, melted and cooled butter, cream, mineral water, vanilla and finally warm milk.

I kneaded the dough until it became elastic and came off the walls of the bowl.

If necessary, add flour or milk.

I covered the bowl with a clean napkin and let it rise until it doubled in volume.

I spread a sheet with a thickness of 1 cm, greased it with soft butter and then sprinkled sugar and walnuts.

I cut the sheet in half and rolled to get two rolls.

I cut each roll into 4 cm pieces, which I then placed in the tray on which I put baking paper.

I let it rise for another 15 minutes, while I heated the oven to 180 degrees.

I greased it with egg and put the tray in the oven for 30 minutes.

However, it is useful to check with a toothpick if they are baked.

How to make karidopite & # 8211 Greek walnut cake

1. Mix eggs, oil, milk, sugar, cinnamon, nutmeg and cloves.
2. In a separate bowl, mix the breadcrumbs, walnuts (keep a part for decoration), baking powder and lemon peel. The mixture of dry ingredients is added over the egg mixture.
3. Spread the dough evenly in a baking tray (approximately 30 ° C). Bake for 40 minutes or until the toothpick test passes.
4. While the cake is baking in the oven, make the syrup. All the ingredients for the syrup are mixed in a saucepan and brought to a boil. Then the fire stops.

600 g flour, 1 cup milk, 2 whole eggs, 2 egg yolks, 1/2 teaspoon salt, 140 g fresh butter, 2 tablespoons sugar, 20 g yeast, vanilla. Filling: 500 g ground nuts, 350 g ground sugar, a pinch of salt, 1/2 cup milk.

Walnut and apple cake

Ingredients for 16 servings:

  • 8 cups of peeled and sliced ​​apples
  • 2 ¼ cup of brown sugar
  • 2 teaspoons of cinnamon
  • 1 cup butter at room temperature

  • 2 cups flour

Method of preparation:

  1. Cover a rectangular tray of pie with baking paper, then place the apple slices in it. Add ¼ cup of brown sugar on top, but also cinnamon.

  3. Put the tray in the preheated oven at 180 degrees Celsius and bake the cake for about 50 minutes - when it is ready, the apples soften and the cake browns slightly. Serve the walnut cake either after it has cooled or as soon as you take it out of the oven, along with a cup of vanilla ice cream.

Walnut and caramel tart

Ingredients for 8 servings:

  • 1 frozen tart dough
  • 1 ¼ cup of caster sugar
  • ½ cup of water
  • 1 cup heated cooking cream
  • 1/3 cup honey
  • ½ teaspoon of salt
  • 3 cups chopped walnuts.

Method of preparation:

  1. Preheat the oven to 200 degrees Celsius.
  2. Spread the tart dough in a round tray, pre-covered with baking paper or greased with butter. Prick the dough with a fork from place to place, then bake it for 25 minutes.
  3. Meanwhile, prepare the tart filling: heat the water in a saucepan, then dissolve the sugar in it, without stirring. After the liquid turns brown, turn off the heat and gradually incorporate the heated liquid cream, but also the butter, then the honey. Turn on the heat again, at low intensity and let everything boil until the composition is homogeneous. Finally, add the walnuts and season with salt. Transfer the composition in the form of a tart, over the already baked dough and bake for another 15 minutes.
  4. At the end, you will remove the tart and leave it to cool for at least 2 hours before serving and serving.

Ingredients for 20 servings:

  • 225 g soft butter
  • 225 g caster sugar
  • 2 teaspoons baking powder

HONEY with WALNUTS - an almost complete energy preparation

In some areas of the Balkans, an ancient wedding custom is still practiced, in which the groom's mother and the future daughter-in-law prepare a mixture of honey and walnut, symbolizing prosperity, abundance and health. In fact, the phytotherapist Ovidiu Bojor says that the walnut kernel, associated in equal parts with bee honey is an almost complete energy food.

The walnut kernel is very nutritious

The impressive medicinal value of walnuts has been taken care of by many ancient physicians, including Dioscorides, Pliny the Elder and Galen. Today, scientific studies validate the therapeutic power of walnut kernels and walnut leaves.

Walnut kernels are very nutritious, and for this reason they are indicated in the diet of weak or convalescent people, but also of healthy ones. Walnuts also have energizing, laxative, deworming, antianemic and antirachitic properties. Walnuts are rich in good fats for the heart (63%). They also contain the following:

Preparation time


  • For egg whites with walnuts and shit (26.5 / 37 cm):
  • 8 egg whites
  • 150 gr sugar
  • 1 teaspoon of salt
  • 100 gr flour
  • 100 gr ground walnuts
  • 350 gr multicolored shit
  • For the cream:
  • 8 yolks
  • 200 gr sugar
  • 150 gr flour
  • 20 gr starch
  • 1 l milk
  • 200 gr butter with 82% fat
  • 1 teaspoon of salt
  • peel and juice from an organic lemon
  • For the glaze:
  • 200 gr dark chocolate with 55% cocoa
  • 200 ml liquid cream, sweetened
  • Furthermore:
  • 2 wafer sheets of 26.5 / 37 cm

Method of preparation

Prepare the egg white top with walnuts and shit.

Turn the oven to 180 degrees.

Sprinkle a little salt over the egg whites and mix them with the mixer until they become crystalline. Gradually add the sugar and mix the egg whites well until you get a firm meringue. Add the flour, spoon by spoon, then the ground walnuts and finally the shit cubes.

Spread the composition in the tray lined with baking paper and level it. Put the tray in the oven for 35 minutes, at 180 degrees, but we also do the toothpick test, for safety.

We prepare the lemon cream.

Mix the yolks, first with a little salt, then with the sugar and finely grated lemon peel, until they become frothy. Add a little cold milk, then the flour and starch and mix the composition. Add the rest of the milk hot and mix quickly until the whole composition becomes uniform.

Boil the cream until it thickens like a pudding, stirring constantly so that it does not stick. Then cover it with fresh foil on contact and let it cool. After cooling, add the soft butter and match the taste with lemon juice. If you don't like slightly sour creams, exclude lemon juice.

We assemble the delicious Mosaic cake with walnut and multicolored shit

Place a wafer sheet in the tray and spread half of the cream over it. Place the egg whites on top with the cream and walnuts. Gently press the worktop to even out the cream layer. Spread the second part of the cream over the counter and cover it with the second wafer sheet. Place a weight on the wafer sheet and leave the cake to cool for a few hours, or even from evening to morning.

We prepare the chocolate icing.

Heat the liquid cream, but be careful not to start boiling. Turn off the heat and add the broken chocolate. Mix well until all the chocolate melts and the composition becomes uniform. Let it cool for 5-6 minutes and spread it over the cake.

When the icing hardens we can portion the cake.

Baigli cake recipe with walnut or poppy seeds: ingredients, preparation

Dough ingredients:

  • 500 grams of flour
  • 150 milliliters of lukewarm milk
  • 200 grams of soft butter
  • 10 grams of dry yeast
  • 70 grams of sugar
  • 3 eggs (2 yolks for the composition of the dough, 2 egg whites and a whole egg to grease the cakes and seal the ends)
  • 2 sachets of vanilla sugar or a teaspoon of vanilla extract
  • the peel of a lemon
  • half a teaspoon of salt

Ingredients for the walnut filling:

  • 100 milliliters of lukewarm milk
  • 250 grams of ground walnuts
  • 70 grams of sugar
  • 70 grams of raisins
  • 15 grams of vanilla sugar
  • the peel of a lemon
  • 2 tablespoons cocoa (optional)

Mix all the ingredients and mix the composition well.

Ingredients for poppy seed filling:

  • 100 milliliters of lukewarm milk
  • 250 grams of poppy seeds
  • 70 grams of sugar
  • 70 grams of raisins
  • 2 sachets of vanilla sugar or a teaspoon of vanilla extract
  • the peel of a lemon

Boil the poppy seeds in milk, then mix all the ingredients and mix well.

Method of preparation:

Mix the yeast with 2 tablespoons of warm milk and a tablespoon of sugar to activate.

Mix the sifted flour well with the soft butter, then add the activated yeast, the yolks, the sugar, the rest of the milk, the salt and the lemon peel.

Knead the dough for 5 minutes, then wrap in plastic wrap and leave in the fridge for half an hour.

Remove the dough from the refrigerator and divide it into two pieces. With a rolling pin, spread the dough sheets well.

On one sheet of dough put the walnut filling on the entire surface, and on the other - the poppy filling.

Carefully roll the filled dough sheets and seal their ends with a beaten egg white. Place the rolls on a large baking tray lined with baking paper.

Grease the rolls with a beaten egg with a little salt, then refrigerate them for 15 minutes, until the egg dries. S

Remove the rolls and grease them again, this time with the remaining two egg whites. Leave them in the fridge for another 15 minutes. This trick helps prevent the shell from cracking.

Take the rolls out of the fridge and prick them with a toothpick.

Place the rolls in the preheated oven at 180 degrees Celsius. Bake them for 40-50 minutes or until they pass the toothpick test (if the toothpick shows no signs of dough, it means that the rolls are ripe).

The Baigli cake is left to cool before being sliced, otherwise it will crumble. Decorate with powdered sugar or chocolate icing and candied oranges or raisins. Good appetite!

Preparation of very fragile dough with walnuts and butter

Directly in the bowl of the mixer (robot) equipped with the kneading hook I put all the ingredients: eggs, butter at room temperature, ground walnut, powdered sugar, lemon peel, vanilla, salt & less flour. We do not put grated lemon peel in hazelnuts, only vanilla.

I mixed everything for 2 minutes. Then I added the flour (all at once) and kneaded approx. 3 minutes a homogeneous dough and quite soft. Being a fragile dough, we do NOT knead it excessively because we do NOT want the development of the gluten network! It is desirable for leavening (bread, cakes, pizza) but not for soft doughs because it strengthens them and, after baking, they become hard, rubbery.

I took out the dough on the lightly floured work table and compacted it with my palms.

I immediately wrapped it in cling film so it wouldn't crust. I put the dough in the cold for 2 hours because it needs relaxation and cooling.

Preservation and use of tender dough with walnuts and butter for cookies, croissants, biscuits

Don't forget to take it out of the cold 30 minutes before processing to give the butter a softening respite. Then you can take the dough out of the foil and spread it according to the recipe you are following.

The frequently asked question is: why put it in the cold if it is too hard and I have to let it soak again? The answer: because the dough needs a time to rest and "befriend" the ingredients. The butter is heated during processing with the robot and must cool well before processing the dough further.

This tender dough with walnuts can be stored in the refrigerator for 7 days (well wrapped in plastic wrap).

  • 700 gr flour

  • 3 eggs
  • 300 g of sugar
  • 140 ml of hot water
  • 140 ml of warm milk
  • 120 ml of oil

Method of preparation:

First mix the yeast with warm water and a little sugar. In another bowl mix 160 g sugar, milk, 2 eggs, oil and salt. Homogenize, then incorporate the flour. Work the paste well. It's ready when it comes off the walls of the bowl very easily. Let the dough rise, covered with a towel, in a warm place.
As the dough rises, prepare the syrup. Bring water and sugar to a boil. After a few boils, remove from the heat, add the rum essence and mix.
Take the dough out of the bowl and divide it into small balls. Spread each ball in sticks, from which it then shapes the 8-shaped martyrs. Line a tray with baking paper. Put the martyrs in it, leave them for about 15-20 minutes, then grease them with egg and put them in the hot oven. The martyrs are baked over medium heat. They're ready when they're golden.
Then take them out, leave them to cool a bit, then pass them first through the syrup, then through the honey and sprinkle ground walnuts over them.

Chocolate cake recipe

To make chocolate cake you need the following ingredients:

  • Flour - 1 kg
  • Chopped walnuts - 200 grams
  • Milk - 500 ml
  • Sugar - 300 grams
  • Milk chocolate - 200 grams
  • Yolks - 10
  • Soft butter - 200 grams
  • Orange essence - 1 tbsp
  • Chocolate cream - 2 tbsp
  • The peel of a lemon
  • Bitter chocolate - 100 grams
  • Salt
  • Dry yeast - 20 grams
  • Vanilla paste - 1 tbsp

Put the yeast in a large bowl. along with 1 tablespoon of sugar, 250 ml of heated milk and a little flour. Stir until a soft dough is obtained, which will be left to rise for 15 minutes.

Sift the rest of the flour, then add it over the mayonnaise. Also now add the egg yolks, sugar, orange essence, lemon peel, vanilla paste and salt. The rest of the milk is added little by little, along with the butter. Knead until a soft, slightly sticky mayo is obtained. It will rise for about 80 minutes.

During this time, you can make the chocolate filling.

In a large bowl, place the walnuts, along with the milk chocolate and the bitter chocolate that have been previously melted. Mix everything well until a homogeneous cream is obtained.

The dough and the filling combine exactly like the walnut cake, which we presented above. The cake pan will be placed in the preheated oven and left at 160 degrees for 50-55 minutes.
